  A good plastic chopping board will not crack from normal fridge or freezer use, but sudden extreme temperature swings can stress a cheap one over time. The material and its quality decide how well a board copes. Here is what actually happens when cold food meets your board, and how to avoid trouble. What Thermal Shock Actually Does to a Board Thermal shock happens when one part of a material heats or cools far faster than another, so it expands or contracts unevenly and cracks. Glass and ceramic are prone to it, which is why a cold dish can shatter in a hot oven. Plastic behaves very differently. A food-safe plastic chopping board in LDPE flexes rather than shatters, so it absorbs temperature changes that would crack a rigid material.
